One of the milestones of the 38th Annual Convention and Scientific Meeting of the Philippine Society for Microbiology is the launching of the book entitled “Philippine Fermented Foods: Principles and Technology” by Dr. Priscilla Chinte-Sanchez, the 1990 Most Distinguished Microbiologist, Fellow of the Philippine Academy of Microbiology (PAM) and one of the pillars of the Society. It is the first comprehensive book on fermented foods in the Philippines. It details and highlights the different aspects of food bioprocessing including the relevant technologies, underlying principles, the microorganisms and their metabolism, pertinent food standards and regulations. The book is a valuable reference for microbiologists, food technologists, biotechnologists, researchers, scientists, educators, students and the industry.
The book is a reflection of the indefatigable dedication of Dr. Sanchez to the field of microbiology. From pioneering researches in traditional Filipino fermented foods, Dr. Sanchez continues to promote the advancement of food microbiology and biotechnology. Her research endeavors generated 24 technologies, many of which were adopted by the food industry. With her vast achievements in food microbiology, the UP Alumni Association recently awarded Dr. Sanchez the 2008 Centennial Outstanding Alumnus for Science and Technology in celebration of the centennial of the University of the Philippines. She was also honored by the International Society for Southeast Asian Agricultural Sciences (ISSAAS) with its creation and launching in October, 2005 of the Dr. Priscilla C. Sanchez Award in recognition of her exemplary achievements. This biennial awards are given for Excellence in Agricultural Research, Excellence in Leadership in Agriculture and Excellence in Research Collaboration given to members and affiliates of the ISSAAS.
On that eventful morning of May 14, 2009, Dr. Sanchez handed the first copies of her book to Dr. Maria Auxilia T. Siringan, PSM President FY 2008-2009, Prof. Lourdes E. Resubal, PAM Chair and Dr. Rosario G. Monsalud, who led the book launching. The book, published by the UP Press, was also one of the many significant contributions during the exhibits session. Dr. Sanchez gladly signed copies of the book acquired by PSM colleagues and members.
The PSM annual convention is a fitting venue for the launching of this important book. PSM has paved the way not only in showcasing the incredible microbes and their amazing impact on man and his environment but also in recognizing and promoting outstanding academic and scientific endeavors, such Dr. Sanchez’s book, a product of a life-long commitment to microbiology.(MATS)
